June 7. Pristine cork! Low-medium acidity/carb. Lots of funk. Finishes a touch acetic, perhaps. 4.8

Nice head right after pouring. Very smooth and soft. Mild funky, grainy. Barnyard funk, cheesy. Bitterish aftertaste that flows into a deep but very gentle sourness. Also very fruity, sometimes very citrussy. So subtle, so rich: perfection.

Embouteillé 31 janvier 2013: On est sur la pomme acide, les cerises de terre et des éclats de chêne terreux. Le sous-bois est très présent pour moi dans les gueuzes Cantillon et celle-ci profite de l'éventail complet. Vif, lumineux et toujours cohérent.

Amazing aroma of cheese and gentle oak. Whiffs of dry sherry even, old books. Wow. Gentle mousse , sweetness ripe stone fruits and Cantillon funk. You can taste the brewery - gets spicier and eventually mineral and bitter even in the finish. Great bottle!

Very different than the last bottle. Touch oxidized, fluffy lemons, dusty. Carb is very soft, nice!
