Really unique lambic. Pale malt gives it a noticeably distinct flavor. Cantillon is always good

This is excellent, perhaps the best Iris bottle I’ve had. Smells like a musty barnyard after a fresh rain. Mold, mildew, oak, horse blanket, overripe apple flesh, sweat, only a hint of sherry oxidation. Beautiful. 2007 Vintage, 2010 cork.

BANG. Perfect balance of sour, brett, bitter, and sweet. I wouldn’t describe it as sweet but there’s enough there to balance it all out. So nice. Thanks Lynne R. You’re a suitcase queen

Nose is tart, bright, and floral with lemon zest, green apple, and grass. Taste is similar, opening with apple flesh and peel, pear, and citrus with grass, earth, and a smidge of acetic creeping in on the end. Smooth, dry, and relatively still.
