Lots of dried fruits. Salty dried apricots. Not very dusty considering it's been almost 20 years. A little acetic acid. A little moldy wood on nose.

This aged like a champ. That Cantillon lemony funk at its best

Very crisp and sharp initially with both citric and lactic acidity on full blast. Stone fruits and even faint notes of rhubarb and strawberry. Gets then more and more funky and dry with traditional musty notes. Not a lot but enough to counter the acidity.

this bottle of 04 vs 05 hit the spot for me, layered funk, stone fruit coming about as it warmed, mounds less acidic than 05.

Noticeably more acidic with a bit of vinegar on the nose compared to 05 but still a cool tick

Bit more acidity than I'd like. Grassy funk. White grape juice vibe but vinegar is starting to come out.

My least favorite of the day. Too acidic next to the other two; it was saved by the bright citrus zing which imo resembled a v weak distant after mouth feeling of szechuan peppers
