Wow. This is tasting incredible. Perfect balance of fruity, floral, and sour. Super impressive, every time. These Cantillon beers are such an incredible investment. So thrilled to enjoy it with dear friends today.

Vacation mode - black tea, musty funk, balanced acidity. Carb is super soft.. Nice minerality.

Still alot of hop brightness at 7 yrs, yons of funk a bit acidic. maybe 10 is the sweet spot for this one?

11/20/22 backlog. Outrageous and pure class of this lambic. Iris at its peak of aging maybe. So balanced carbonation. Old hops. Cheesy, woody, funk, vibrant, slight floral and mold. Superb expression of a lambic. 4.70

So sour, so hoppy, has that sharp Belgian near-wine vinegar acidity, and that complex hoppy bitterness and Gueuze funk. Almost lingers like a digestive with how cool and herbal the prominent hop bitterness is.

Low carbonation due to ageing. Dry funk with a cheese/curd background. The joys of a bottleshare.
