Lambic - Fruit

Bottled 19 January 2022. A collaboration between Cantina Giardino & Cantillon. A blend with the pomace of Aglianico grapes and 3-year-old Lambic. Before being blended with the Lambic, the grapes underwent a 3-month pellicular maceration in chestnut barrels.

Definitely a lacto-driven beer, a little acetic acid in there and after about 2/3rds of the bottle you start to taste the Brett, the grape must adds a lot of brightness to the character of the beer, very enjoyable bottle

This one is great. Jammy and sweet, tangy and tart, color is bright but clear-ish. Black pepper spice. Bit of Welch’s grape juice flavor, in a good way. Fizzy carb dissipates very quickly.
