Really perfect. Almost winey— white grape, peach flavors. A little white pepper. Balanced acidity. 💯👏🏻

Pungent and funky, it's closer to their straight gueuze than a white grapey chardonnay, with a touch of lacticity on the back end, and rotting peach as it warms. A hint of blue cheese stuffed olive amidst the lemony acidity.

EB Frilltessence 2023. Paired with cauliflower “steak” with fermented shiitake and bacon crisp. Has lost a lot of the really weird cauliflower vegetal notes which was kinda sad for the pairing but good for the beer. Still a hint volatile but also good.

Bottled February 7th, 2022. SUPER vegetal - nose is almost all cauliflower. Taste is vegetal with some funk and tartness. I've heard Racine is hit or miss based on bottle variation. This was a big miss.
