Iris (2018)

Lambic - Traditional

The Iris beer, a spontaneous fermentation beer made with pure malt, is really unique. It matures for two years in oak-wood casks and undergoes a natural second fermentation in the bottle afterwards. The fresh hops give the beer a bitter flavour. This characteristic, combined with the absence of wheat, constitute the main difference between the IRIS and the other Cantillon beers, that are made with Lambic.

This is such a great n unusual Cantillon. Notes of lemon, grapefruit pith n funk on the nose. Nose is reflected well in the palette along with waves of peppery spiciness, white grapes, delicate noble hops along with a nice caress from the barrels. 4.35 💥

Pale ale malt gives more rich malty notes here than regular Lambic base. Love the low acidity. Citrus and honey notes with decent amount of funk. Bitterness on the backend, fits the beer very well. Dry and bitter finish.

One from last night. There are worse beverages to imbibe in a hotel. Lovely bitter, earthy, biscuit, vinous, herbal, almost elderflower, oak, dirty funk. Complex but a bit rough on the finish. Well worth ageing on this evidence.
