Cuvée Saint-Gilloise (Champions)

Lambic - Traditional

A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II. Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Always find this one very drinkable. Wood, lightly floral hop notes and a bit of brett in the background. For me, the sourness is there but restrained, making for a refreshing finish

Classic Gueuze. Bubbly, sour, tart. Worth the price tag and the saving (“conditioning”) in the beer fridge

I feel bad for the poor bastards who don't have a bad bitch that offers to give you blowjobs in random parking lots.

Perhaps my single favourite lambic in the world. The single vintage is highly complex with white grape, green apple (skin), bell and black peppery notes. Creamy, but also light and dry. Such an incredibly underrated beer.
