Lambic - Traditional

In March 2005, the brewery Cantillon had bought second hands barrels in the region of Cognac. For 15 years, the wood had been impregnated with cognac. Then for 2 years, our lambic has extracted all the flavors and aromas to make a unique gueuze. The name comes from the geographic location of the brewery.

Una lambica de libro. Muy suave, gas correcto y muy fino. Tiene el dulzor de inicio muy rico. El toque que le da el envejecido en barril de cognac me aparece en el final del trago y retrogusto, otro dulzor distinto, pero no se apodera de la boca.

2018 vintage - tough to compare to the 2012 vintage I had back in 2015 since this tastes too young still, but it’s a banger all the same. Smooth yet funky, with blue cheese, apple, a bit of cognac, and a mild honeyed sweetness.
