Light, delicate carbonation. Big cognac. Subtle, almost creamy acidity is eclipsed by the barrel, hopefully will develop a bit more with time. A little more funk wouldn’t hurt, either. Not my favorite vintage, still good.

Funky, dry and tartish with hints of green apples, farmyard and woody oaky notes and mild sourness. Complex but a bit unbalanced

4.35. A lot of Cognac and pungency in throat. Need time to get rounder I guess.

Incredibly young, but this definitely has a unique profile with the rum barrel. Looking forward to try again in ~10 years
