Brewed 12 December 2013 Bottled 15 March 2019 The wort of this Lambic underwent a boil of more than 5 hours in order to concentrate the sugars even more, to ultimately reach a density twice as great as a regular brew’s. If the recipe for this beer is technically the same as a Lambic, its flavor is radically different.

This beer was truly something. Fair amount of whisky notes mixed with funk? Odd, yes it was. Hard transition at first but solid as I kept drinking. Can't say I'll have this again. Thanks for the great conversation and good times! Damian Michi

4.40. Super good! Got an obvious hint of Port wine. On palate it even has a Vin jaune finish. The art of time and oxidation.

This is the best still lambic I’ve had. Initially there is a huge Vin Jaune quality to the aroma. Balsamic vinegar but delicately, caramel, old lambic. In the mouth it’s totally flat but it is very oily, coating and the depth of the lambic is insane. Love

The color is limpid, deep raisin brown. Nose: silky, date, raisin, medium-sweet apple, a suggestion of biscuit, cranberry, remote caramel, wild yeast, port, vanilla. Taste: date, raisin, aged port, vanilla, cranberry, damson, rowanberry, wild yeast.
