Lambic - Fruit

Bottled 19 January 2022. A collaboration between Cantina Giardino & Cantillon. A blend with the pomace of Aglianico grapes and 3-year-old Lambic. Before being blended with the Lambic, the grapes underwent a 3-month pellicular maceration in chestnut barrels.

葡萄の種のあたりの味。渋味と酸味。結構印象違うな。生産年の違いか、ボトリングされてからの熟成期間の違いなのか。不可分ではあろうが。ある意味かなりワイン的と言えるか。(前日のドロゴーネはかなり果実感強かったのだが、そういう感じではない。) アルコール感も少し。
