Very flavoursome throughout - tart / vinous / VJ barrel profile is the big hit here with a rich citrus base lambic, mild funk, nutty notes, some lingering acidity, elegant and delicious

Unusual, big dill / saline note - sour vinous mid, quite rich, some acidity in the finish. Would never have known it was cantillon blind, tastes more like a natural wine

Vanilla addition is very punchy on the nose and adds some interesting sweet notes throughout. Sherbet carb, light funk, hefty framboise acidity, never ending dry blueberry / oak finish
