Tons of carb on the bottle. Better with age, the rhubarb was faint before and now if completely miss if it I didn’t know it was there. I was worried it would be sulfur, but there was a ton of sweetness still.

This was another that benefitted from the wine pairing. Love this blend of the beer - and the wine was just as exceptional.

Cuvée du Millénaire Britanik
Yeah it’s basically classic gueuze with a different label, but it’s also a testament to blending the right barrels and aging it.

The wine was one note of sharp black pepper, but the lambic had complex spicy notes everything from cedar to tobacco to vanilla to sweet grape juice.

If I could only rate this a 6/5. The wine was aggressive on the yeast and grape skin, but it the lambic mellowed out the grape pommace to perfection.

Drogone Lambic (2020) Britanik
01/22/2020 Bottle date. Incredibly soft, yet tons of fruit forward flavor. Elegant and earthy, with just enough tannic qualities. Subtle funk on the finish.
