Lambic - Fruit

Cantillon CLAC (Trois Cépages) is a blend of 2- and 3-year old lambics with Cinsault, Alicante, and Carignan grapes. It is bottled in 75cl bottles and made its debut in 2020. The fruit concentration is 300 grams per liter of lambic. The acronym CLAC stands for Cinsault, Lambic, Alicante, and Carignan, denoting the three grape varieties (trois cépages) and is the first Cantillon lambic to contain a blend of three different grapes. According to the brewery, each of the grape varieties were macerated separately and then blended together.

Dr. Lambik

This is like a red natural wine, but smoother and less alcoholic. Aroma is vinous, brett, slight aceton. Taste is not too acidic, quite smooth, fruity, but dry, obviously. Mouthfeel is a bit thin (watery).

Fruchtig, Trauben häutig und der nicht tief gehende Essig-Ritzer. Wird dann schnell sanft zum Gaumen, mehr Traubenfleisch aber auch Kirsche und Pflaume. Hinten Tannine aber gar nicht so dry
