Lambic Vin Jaune / La Vie Est Belge (2022) Grün
For the age this is perfect right now, could be a hint less acidic. I get wild honey, herbs and spices, wet wood and hints of smoke with a super long nutty finish (think caramelised pecans and walnuts). Delicious!

Probably not the best lambic ever, but I can not imagine a woodruff beer to get any better

Single Barrel 1-year Lambic (2022) Grün
All the edges you expect from a young Cantillon, heavy on the oak and some bitterness. Very drinkable, good for aging

Late check in Quintessence Fantastic Geuze, one of the best I had from Cantillon

Late check in Quintessence No ranking for this since there was so much bottle variation. Some were still very fruity and complex, with some the cellar flavor took over. All in all great if you got a good bottle and very interesting to try.

Quite acidic, So weird with the peanuts. Also A bit of carbonation that is very confusing

Celebrating the first workday. Thanks for the bottle Vendula P. 😉 Getting quite tart, vanilla is fading. Still good but better when it's fresh.

2018 sticker date. Still very young and not very complex yet, also quite acidic bottle.
