Cuvée Saint-Gilloise (Champions)

Lambic - Traditional

A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II. Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Wit fijn gelijkmatig schuim, blijft lang. Strogeel, licht troebel, mooie pareling. Aroma van zuren, paardendeken. Rond, vol, prikkelend in de mond. Nasmaak bevestigend, blijft hangen. Komt het azijnzuur iets te gel door ipv het melkzuur?

Funky musty earthy nose. Superbly balanced, funk and barnyard, light and pleasant acidity. Bliss.

This was so different than other lambics I've had. The dry hopping gave such an interesting flavor profile and it was very enjoyable.

Classic Cantillon flavor + some extra carb!!! Aged in bottle for 4 years. Smells just like the quaint brasserie in Brussels that I spent many of my Saturdays at 🍺

Never tried this one & I found it amazing. The different hop used, perhaps fresher, gave this beauty a lemonade tangerine lullaby all around your palate. Tartness as usual, a bit gentle.A small one is not enough.Citrusy fresh aroma for a lambic off course
