Cantillon is always a treat. And it's really awesome how much complexity and smoothness it gets over years. Big breatty and stonefruit tones, light breadyness, balanced sourness. Thanks ( ͡° ͜ʖ ͡°) .. !

Basic lambic/gueuze >>> almost any AWA. Wish i could drink this once a week. Soft. Light carb actually. So much funk. Light acidity.

A classic that always works and is really nice now with a few years of age on it. Leftovers from sorting out the pickled herring went into the chef :)

Signature musty lemons, fresh earthy grains, white peppered leathery grapey funk, brilliant mellow lactic acidity, tart dry finish. Fantastic.

Still lovely. Tastes like the top floor of the brewery - musty, funky, tannic with a bit of lemon. Dry, yeasty, earthy. Paired very well with some lemon garlic scallops and asparagus.
