No pop when opening, needs some more carb. That said, barnyard / straw / hay, rich grapefruit, some barrel. 4.4

Such a soft, delicate carbonation. Lingering cognac mixed with Cantillon funk. Quite dry. Low acidity, wish there was a little more. Very likely get better with more time, but quite nice fresh.

This beer is pure awesomeness. A lot of cognac barrel, sweeter and softer than your average cantillon beer. Cheers!

Barrel is SUPER present right. Glad to try it young but really excited to try it in 5 years or so.

Litt sødme og rikhet fra cognacfatene. Hint av en syrlig fruktighet sammen med en forsiktig start av cantillonsk funk. Balansert, og fortsatt ung. Digg og utrolig lovende for lagring.

B6: Sharper in taste and the cognac barrel was not as prominent as in B7

Low carb, golden sight haze. Smooth gueuzey funk, a bit of apple and apricot. Quite oaky, dry, and a distinct white wine character.

Lightly sweet (from the cognac?). Mild funk and balanced. Lovely stuff.

Cereal, vanilla, pear, apple, apricot, a white dessert wine thing, honey, little bit of barrel wood and an underlying aged grape syrupyness (again I guess that’s cognac!). Definitely interesting to try a cantillon aged in old spirit barrels

The cognac is nice. There’s an unbalanced sweetness that may age well. It’s good and smells great but it doesn’t quite all fit together perfectly yet.

Gros funk au nez et super présent en bouche, très bonne longueur fermier, pomme acide avec une finale barrique. A oublier quelques années

What a relief. This year is great. First experince was just a bad bottle. Wow. Great bottle. Great experience. Wow. Young but has a huge cellar potential.
