At a festival of lambics #Quintessence2022 this aged rhubarb lambic is a perfect sweet & sour marriage, like really reduced down rhubarb compote that just happens to be boozy.

Bought when I started my PhD, seems only reasonable to have it once I got awarded the degree. Officially Dr Costoya! The beer: citrusy, hay, medium funk and a bit of yogurt. Can't say I get the rhubarb, but tart amd very easy drinkable! 3.9

BLIND TASTING: Aging has done its job as it reminds more of a Hill Farmstead saisons with honey than a lambic. Gentle, floral, quite sweet considering its age

Shiitake-mushroom-like musty Brett funk and Wakefield Triangle forced rhubarb poached in white wine, lemon juice, lemon zest & aromatic leafy herbs on the nose; taste is tart lactic acidity, juicy, jammy steamed rhubarb, white-pepper-y funk & oak tannins.
