Like the past vintages I’ve had, it needs time. Definitely off-putting to some regardless… no carb and mostly malt and funk (I still get great citrus notes, albeit rotten, and I love that.) Time does wonders for this one. Sit on it.

28 September 2021 bottling A pleasant Lambic to sip, still full of complexity but much milder and goes down easier due to it being still. Notes of tart grape skins, sweet flesh nd peppery pit. Light overall peppery-ness. Nose has cheese nd vinegar funk.

Nose is funky and tart, slight oak somewhat acidic. Light golden color poured flat. Taste is tart apple with a huge of oak and some yeasty funk. Smooth no carbonation finishes soft.
