Oddly lacking something. Still very pleasant but seemed to lack the punch and deep flavour I’d normally expect from peak Cantillon.

Three years old lambic from the cask.. absolutely an intriguing one.. seems like less acidic and more Oakey as the one I had before (younger one). Musty, tart, complex, some acidity and lots of oakwood playing here 😜

Lambik fra sesongen 2017-18, flaska januar 2021, flat. Nok tid både i fat og i flaske til å utvikle smaker. Tørr, rund fatsmak som sender tanken i retning funky hvitvin og hint av konjakk, noe mild sitrus, karamell, utrolig balansert. Dyp, gyllen farge.
