Sophia Lambic (2020)

Lambic - Fruit

A collaboration between Cantina Giardino and Cantillon. A blend with the pomace of Greco di Tufo grapes and 2 years old Lambic. Before being blended with the Lambic, the grapes underwent a 6 month pellicular maceration in amphora.

Fruit grapes, good grapes, little dry/sour on finish, really really liking it. This and TWCP Continuance are best of the night. The Sophia wine was straight garbage

Mega interesting. Drank together with Sophia wine. Lots of the tannins come through in the lambic as one might expect from the production method. I love what the funk adds to the grape lees, it’s an interesting and unique blend that respects both products

Приятный аромат нектарина, белого винограда, красного винограда. Немного пряный с кислинкой, с нотами уже не агресивных бретт. Вкус восхитительный, очень полный. Приятное обвалакивающее облако наполняет рот оттенками винограда, нектарина, лимона. Вау!

Nice sweet white grape flavors, tart but balanced due to the juicy sweetness from the grapes. Almost a bit of stone fruit juiciness. Briney Brussels funk is there but it’s subtle. Nose is white wine and Brett.
