EB Frilltessence 2023. Paired with deep fried herring. These Jura grape lambics still baffle me slightly by providing a focus on juiciness rather than the separate complex tannin structures of the grapes. However, despite that this is some tasty glouglou.

Œil : rosé, con fin. Nez : raisins rouges, douceur, léger terreux, vin rosé. Bouche : vin nature, fruits rouges, raisins, équilibré, acidité très douce, léger boisé. Sèche en fin avec des notes de raisins. Superbe.

Super interesting. Surprised it resembles a Rose. So many wine inspired Lambics here now. Aged in clay, not wood. Super soft mouthfeel. In the end this is as close to a Rose lambic as we can get.
