Another scrapbook entry from; this from 27/08/2011. I said fresh out the bottle it’s all sour and horse blanket, give it some air and the sour develops notes of lemon and the farmyard mellows. I loved it!

18 avril. Moeder Fontainas. J’achève mes check in 😅. Quand y a de la IRIS 2010 en fût tu poses pas de question. Vraiment parfumée mais pas trop intense en bouche. Ça se boit tout seul.

After 12 years this one still has something to say. Of course oxidation is radicated in here, but it's pretty well balanced with the other flavors. A classic Iris comes out, but more mature and complex, and still so much drinkable. Nice one.
