I prefer the juicier fresh versions but this is still delicious. Starting to get a bit more acidic but not overbearing.

2014/2021. Left. Lots of mold under the cap and on top of the cork. Pours with bigger head and more sediment than the 21. Nose is fascinating: hints of aged-beer cardboard meet loads of residual apricot and a sharper funk. More funk tartness and mellower

Side by side with fou foune 2021. Cork was darkened. Musty funky goodness. Lots of sour tartness mixed in with a bit of complex minerality. Hint of sour tartness on the finish

Very deep and complex funk. Musty, cardboard, bit of stink from the mold on the cork? Very mouthwatering, fruit has faded but is still detectable, enough apricot to stand up to 2021 on the palate.

8/26 AA Share — 10 year Fou vert. Minor subtleties in tartness, fruitiness, funk, and carbonation, but obviously all were very similar and very good.

I am not a lambic connoisseur, nor a Cantillon fanboy, by any stretch of imagination. But good boy this 2014 bottle standing in my cellar since, well, 2014, has aged to absolute perfection. A light sharp end but the depth and leather and farm... Wow.

Oh my sweet Jesus. This aged glorious. Apricot is banging in this. Awesomely aged lambic backbone. One of the best bees of the weekend so far

Kirpeän hapan ja pehmeän hedelmäinen tuoksu. Erittäin kirpeän hapan ja täysin kuiva. Aprikoosi tulee läpi jälkimaussa. Ei heikoille!

Hedelmäisyys on siirtynyt taka-alalle hieman. Tuoksussa on edelleen parfyymisyyttä. Varsin hapanta.
