Very pleasant and easy drinking framboise, young and juicy with barely any funk.

Utopias Barrel-Aged 120 Minute IPA (2023) C.

I've always seen the 120 min. as a barleywine rather than an IPA. Lovely floral hops and orange/marmalade. The barrel of the Utopias is also excellent, imparting just enough of its characteristics without adding too much heat or booziness.

Le Plaisir C.

Very soft but intense floral nose, getting a deeper, more pungent, poached pear compared to the clean flavours of the Chenin Blanc.

Chenin Blanc C.

Bright, clean, just the slightest hint of pear juice.

Blåbær Lambik (Blueberry Lambic) (2022) C.

Like a chilled blueberry juice, great summer drink.

Rose De Gambrinus (2023) C.

Reaffirming my preference for drinking fruited lambic fresh. Especially when they are already this balanced while young, no need to wait for any crazy tartness to mellow out. Lovely fresh raspberries, and honestly prefer it over the cheesiness of aged

Sang Bleu (2023) C.

Body feels slightly heavier compared to the 2022 bottle, very smooth acidity, barely burns at all. Same intensity, juicy fruit upfront, with a brief berry astringency. An almost honey-like sweetness lingering as it warms.

Magic Lambic C.

Lots of amazing stuff available right now but Magic really blows minds with the sheer amount of fruit it delivers on the nose. Been recommending and sharing it in the tasting room and many agree it's the star of the show at the moment.

Saint Lamvinus (2022) C.

Flat, vinous, very smooth tartness. Could definitely do with more aging, but it's honestly a very pleasant grapey lambic-juice. Could go very well with some dessert.

Mamouche (2022) C.

This was accidentally aged in barrels that held Zwanze 2022. Very interesting. The peppery spice is still clear on the nose, but is far more restrained and enjoyable on the palate compared to Poivre.

Vin Santo 2022 C.

Was under the impression that Cantillon's grape lambics focus on displaying dry and earthy notes. This was very different. Very fruity, white grape juice, lovely bit of sweetness.

Lambic Grenache Blanc (2021) C.

Don't have much experience with grape lambics, so this is really eye-opening. Way funkier than I was expecting. Very clean flavours, I think the dryness of the grenache blanc works very well with the characteristics of fruited gueuze in general.

Iris (2022) C.

2022 bottle, very fresh, but I'm still getting a fair bit of mustiness. Honestly don't understand lambic as well as I'd like to, but it feels like a great balance of young apple/lemon and aged funk.

Nath (2021) C.

Pretty stinky, kinda preferred the nose on the 2018. On the palate though, way brighter funk, earthy rhubarb, delicious.

Nath (2018) C.

Pleasantly musty, stale, funky nose. Unfortunately the rhubarb has mostly faded. Still a lovely gueuze.

Fou' Foune (2014) C.

Very deep and complex funk. Musty, cardboard, bit of stink from the mold on the cork? Very mouthwatering, fruit has faded but is still detectable, enough apricot to stand up to 2021 on the palate.

Fou’ Foune (2021) C.

Lovely ripe apricot nose, the freshness really jumps at you compared to the 2014. Fantastic as a typical apricot sour, but honestly would not have guessed Cantillon in a blind test.

KBS Maple Mackinac Fudge (2020) C.

Doesn't match up to CBS for me unfortunately. Very smooth and chocolatey, prominent coffee roast, but leaves me wanting on the mouthfeel for a stout that includes "fudge" in the name

Lizard of Koz C.

Freshly crushed, perfumed, minty blueberries and chocolates on the nose. This has to be more fruit than stout, after several years of aging I think the blueberry has mellowed to a point where it goes nicely with the sweet vanilla, spice and milky choc.

Spontantripleblueberry (2020) C.

Same jammy blueberry preserves on the nose, slightly more fragrant. Juicier, sweeter, the mouthfeel is far more substantial compared to the double.

Spontandoubleblueberry (2020) C.

Sweet jammy blueberry preserves on the nose, palate is surprisingly light. Very sharp tartness on the finish that almost feels like overwhelming bitterness.

Spontanpassionfruit C.

Massive stinky cheese on the nose, devoid of fruit. On the palate it's still super funky and thicc, starting to get some passionfruit. Finish is medium-length, gets juicy at the end.

Rosé de Gambrinus (2020) C.

Gueuze 100% Lambic Bio (2019) C.

Still young, soft with little to no carb. Green apples and a hint of honey. Slightly dry towards the end, but the mouthwatering tartness lingers.
