Lambic - Fruit

A collaberation between Cascina Deglii Ulivi and Cantillon. A blend of 9 different (grape) pomaces and 2-year-old lambic. Before being blended with the lambic, the grapes underwend a 9 month maceration.

Grapey nose with that classic aroma of Cantillon lambic. Really really nice color. Fairly sweet and carbonic on the tongue, like a sparkling wine. Hit of grape sweetness that mellows into complexity. Finish is clean and dry with a fruit burst. Acidic.
