Aroma is shy: some nutty sweetness from the Port barrel with a hint of lemon juice. Initial flavour amplifies that and brings in the Cantillon funk without the acetic quality. Balanced and drinkable. Reasonable carb. Dry, vinous, woody, nutty finish. Wow.

Really get the port barrel raisin and plum notes. Caramel and some moderate wood and baked bread. Way different than most Cantillon and it’s delightful

Very sweet and smooth. Well rounded and really subtle. Very good. Small hints of fruit and sour. Superb.

Unfathomable. Quite possible the best lambic I’ve ever had. Words cannot describe. What a way to see out the year!

This is lovely. I feel like there's a bit more interesting fermentation stuff going on here, so I reckon those port barrels had some fun activity going on in them. Paid a fair bit for this bottle - not sure I would again, but very much enjoyed this glass!

White grape port notes. Honey notes, funky. Nice acidic notes. Well balanced and quite vinous. With yeast added more lemony acidic notes. Added complexity

2/13/21 backlog. Elegant, woody, leather, brett and port wine decadence, vinous. Classy lemonish and tart, pretty drinkable. Like an improved gueuze. 4.40

C’est complexe et délicat avec une évolution très marqué dans le verre. Avec le temps les arômes se dévoilent, funk, raisin, cuir, sucré, bois, métal, le tout dans une succession rythme et équilibre, une gueuze excellente !
