Tannic berries, earth, soft acidity.

Spiced apple cider. Did not age well, surprisingly.

Goliat Maple Beacon Edition

Fair amount of maple and coffee left, with a pleasant malt backbone. Some barrel too, with very light smoke.

Canadian Breakfast Stout (CBS) (2017)

Coffee and cookie. Not awful for the age.

Magic Lambic (2023)

A little more rubber than I wanted, but it's solid. Age will do it well.

Raspberries, lemons, big funky notes, very much alive acidic tones.

The raspberries are so concentrated and the fruit just hits in a lovely way. Big funk, lovely acidity.

Drogone Lambic (2021)

Juicy red wine grapes, tart, tannic, bright.

Cuvée Saint-Gilloise (Champions)

White wine grapes, soft acidity, surprisingly white grape juice forward.

Drogone Lambic (2022)

Heavy funk, big tannin notes, bigger body than expected.

Kentucky Breakfast Stout (KBS) (2013)

Retained a lot of the original, but it's a little light on the barrel, surprisingly.

Vigneronne (2020)

Dry white wine, perfect acidity, funky, and clean on the finish. Fantastic lambic.

Mamouche (2021)

Spicy, vegetal, peppery finish. Regular funk/acidity.

Magic Lambic (2020)

Berries galore, with a vanilla backend that finesses the funk and the acidity with, well, magic.

50°N-4°E (2022)

Really bright and fruity fresh. Clean, woody, playful acidity.

Classic Gueuze 2019

Thick Chardonnay, bright fruit, but ultimately drinks well beyond it's age.

50 Degrees N - 4 Degrees E (2020) (Cognac)

There's a shocking amount of barrel in here and it's lovely. Great down the middle battle with the heat versus the funk.

Iris (2013)

Lemon verbena, light rinds, some really recessed funk.

Kriek 100% Lambic Bio (2020)

Cherry, watermelon, jolly ranchers. Sticky, funky, and nicely tart.

X-mas Porter 2011 Til Fra Via (To From Via)

She held up well, but it's a last legs situation.

Iris (2004)

Insane levels of funk and layered richness. Earthy, complex, lemon rinds, old raspberries.

French Toast Bastard (Barrel Aged Series 2022)

Ok this is pretty fire. Rich maple syrup on French toast to the t. Definitely leans extra sweet, but never cloying. I want bacon.

Fou’ Foune (2022)

Fresh, bright apricot, great bright funk, medium acidity.

Gueuze Loerik (2019)

Lemon lime zest, mineral water, and super flat. It's fine, but definitely prefer the OG.

50 Degrees N - 4 Degrees E (2018) (Brandy)

Really nice funk, dry fruit, silky body. Brandy heat is totally light on the end.

Rosé De Gambrinus (2022)

Soft, easy tartness, nice clean finish. Raspberries are still pretty fresh and fruity.

Grand Cru Bruocsella Lambic Bio (2019)

Nice and balanced. Lemon, tart, clean.

Rosé de Gambrinus (2020)

Funky, dried raspberries. Bright tart acidic fruit, dry earthy finish.

Fou’ Foune (2021)

Great apricot, full bodied, extra tartness and funk.

Lambic D'Aunis 2020

Lovely red grape, super heavy red wine notes, big funk.

Vigneronne (2018)

Deep white grape, super funky, lovely barnyard.

Castle Black Stout

Tobacco, vanilla, chocolate, light heat, lots of wood.

50 Degrees N - 4 Degrees E (Armagnac) (2017)

White grape, lemon rind, full funk and light tartness.

Divin Lambic

The most subtle Cantillon I've had yet. Mild tartness, great funk, and really well balanced red grape, with more fruit than the tannin.

Ghost Vision Lager

Super easy drinking, crushable and crisp.

KBS Cinnamon Vanilla Cocoa

Loads of cinnamon, smooth vanilla, dry powdery chocolate. Reminds me of snicker doodles.

Saint Lamvinus 2020

Sick, as usual. Full bodied, great soft fruit, and it's really bright since it's fresh.

Framboise Boon (2018)

A little too sweet, but overall, pretty nice.

Gueuze 100% Lambic Bio (2018)

Sharp citrus zest, sour, earthy, medium body. A brisk fruit all over.

Rosé de Gambrinus (2013)

Whispers of raspberry that literally melt into the Gueuze underneath. Aged quite well.

Backwoods Bastard (2016)

Woody, smooth, and sweet caramel. Really nicely balanced, with almost no heat.

Nath (2018)

That's a stinky cheese I could get used to. Great tart tannin, bright.

KBS Maple Mackinac Fudge

Chocolate, huge gobs of maple syrup, coffee to dry out the stout. Woody, decent bourbon.

50°N-4°E

Awesome tartness, great wine grape body, subtle cream. Soft, and much easier to drink than expected.(2015/2016)

World Wide Stout (2010)

A little thin, but it's a lovely chocolate sauce stout. Very easy to drink and surprisingly so!

Fou' Foune (2017)

Awesome as usual. Lots of apricot, well done sourness.

Saint Lamvinus (2017)

The grape fruit and tannins settled really nicely in this one. Better balance than I've had before.

Classic Gueuze (2015)

Celebrating the CSB 7th the best way we can under these circumstances....with big bottles! Smoother and more buttery than the nose would imply. Nice, light, great tartness, creamy, and decadent.
