Bruised green apple, sourdough yeast, light barnyard funk, and white vinous character. Very balanced with acidity upfront then drying out throughout and finishing with a lemon sherbet sweetness.

Part of the tour tastings. Good lord this is an incredible brew. The nose is complex, the tasting notes are a journey. The ambiance at the bar is lovely, too.

Finally got my hands on the ultimate Unicorn. It has a subtle acidity backed up by a bread wheat character. Definitely the smoothest gueuze I've ever had
