It's been cellaring for about two years, and the tartness has increased strongly. The nose is full of cherries, as is the finish, but they disappear in the middle of the evolution, replaced by a more gueuze-like profile

Couldn’t resist the siren call of the Cantillon. 12/14/22 bottle, bright and lightly funky, loads of cherry, lightly tart. Super tasty and much better than the last time I had it at Shelton Fest in ATL.

Bottled 2019. Sour, tannins, dry, with an almost ghostly fruit. Like it's still there, but you have to really look for it. In a good way. Yeah, pretty great.

This was on tap. According to the owner they are the only pub in Rome with Cantillion on tap. Amazing.

Elegant, fine effervescence. Deep cherry flavor. Not too sweet, not too tart. Gorgeous ruby color.
