Cuvée Saint-Gilloise (Champions)

Lambic - Traditional

A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II. Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

La ferme dans un verre. Du foin, du cul de vache, c'est ultra austère. Intellectuel mais pas plaisir

Turns into black tea w lemon. Finish is fairly bitter. Kind of weird TBH! Earthy hops.

Told this was the 2017. Didn't have that big noble flavour of this fresh but more of that smooth Cantillon gueuze taste (although I think this is unblended so I'm obviously talking shite). Cracker either way but think I prefer it fresh.

The dry finish is stunning here. Clean fresh and tasty. Lambíc funk, just keeps opening and then such an abrupt finish

Sweet, sour & salty. Don't think it's worth the extortionate bricklane price we paid for it but very interesting.

Just about got away with breaking the cork. That's delicious, dry, very smooth. Some bitter and sour but the whole thing is really well balanced.
