I think they did this no favors by pairing it with the wine. The wine was great but super punchy while this was soft and creamy and on the subtler side. Would love to revisit a bottle!

The final result is not so special but I liked it in the end. Has so much from the wine, not an easy one to take on a leash, but the lambic still stands as a good base. 4.3

The sherry felt excessively light, the lambic was better matched with the sweetness s.t. the acidity brought out more appley sweetness. However the final product was still too delicate for being the 9th glass. But maybe a VORS with lambic? 🥰
