LCI. Lower acidity, clean, natty wine vibes . What big should normally taste like

A bad bottle. Drank more than I should’ve, bottle variance can happen

Lou Pepe Gueuze (2005) Chalifour
Had the old Cantillon tea note going for me. Ian’s generosity and cellar depth is always unmatched. Probably give the slight edge to LPG to A&T today
about 1 year ago
Minerally, lemon, a good depth of flavor. Showing really nicely for only 1.5 years in the bottle. 🐳

Last bottle. Killer. Floral, still a good amount of fruit, acidity is soft. Damn good lambic

Saint Lamvinus (2019) Chalifour
Classic SLv profile. Damn near perfect born of beer and wine, it doesn’t get better. Could use just a touch more Brett for me, otherwise perfff
over 1 year ago
Classic Geuze profile, a bit more woody. Nice acidity, smooth sipper but was expecting more complexity / blue cheese to come through .

Saint Lamvinus (2021) Chalifour
Phénoménal. Soft pillowy, perfect melding of wine and lambic. Reminds me of gamay

50°N - 4°E (Batch 7 - 2020) Chalifour
Wasn’t my fdvoeite. Fairly bitter, not much barrel influence

Lou Pepe Kriek (2018) Chalifour
A bit less noyeaux than my last bottle. An all time beer. Perfect for Christmas Day
over 1 year ago
Paired with wedding cake samples. Fruit is oddly falling off compared to what I remember, a little more muted but still good

Cuvée Saint-Gilloise (Champions) (2023) Chalifour
Love the new label. A perennial favorite, so glad to find it in the wild

In the Darkness Below Chalifour
Classic dogfish head fuckery. Weird oysters and squid ink, but the taste was dead on. Good stout

Wanted to love this, but lacked the big promised flavor

Gueuze 100% Lambic Bio (2016) Chalifour
An unremarkable bottle, 9/16/2016. At the 7 year mark
almost 2 years ago
Not in the best headspace right now, check back in at a later date.

50 Degrees N - 4 Degrees E (2020) (Cognac) Chalifour
A bit flat but i still think a shining example of creative, non fruit lambic
over 2 years ago
So cool to have it on draft near the house. A very acidic version compared to the recent ones
almost 3 years ago
Holding up well after 6 years, still juicy and low acid
almost 3 years ago
A perennial favorite, at a good spot about 2 years in the bottle. Lost some jamminess , better integrated into the lambic base

Blåbær Lambik (Blueberry Lambic) (2021) Chalifour
I enjoyed this. But it’s not better than Tilquin myrtille. So bad QPD

A pleasant surprise. Quite good, very soft. Would likely love the whole bottle to myself

Tyrnilambic Baie D'Argousier (2021) Chalifour
Lovely, lots of minerality, grape skin, barnyard, slight spicy similar to gooseberry
about 3 years ago
Great, none of the green pepper notes. Refreshing, floral, spicy, moderate acidity
about 3 years ago
Actually thought it was pretty nice, though hard to do more than a glsss of it as the aroma is intense.

Gueuze +2+3+4 (2011) Chalifour
One of the more assertive Cantillon guezes I’ve tried. Really nice

Wild Friendship (2022) Chalifour
Thank goodness for the Allagash component. Just a nicely done Geuze

Saint Lamvinus (1994) Chalifour
5/5 tick. The beer itself held on well, but acidity started to take over.

Lou Pepe Kriek (2014) Chalifour
Stellar, always a standout. Even more so with a small sample

Lambic Vin Jaune / La Vie Est Belge (2020) Chalifour
Not as much vin jaune character as 2019/2104 bottles. Probably very nice with a larger pour than just a tasting
about 3 years ago
Drogone Lambic (2020) Chalifour
The wine may be better though. Really nice beer, one of their beet wine grape collabs
about 3 years ago
Nuit Bruxelloise (2019) Chalifour
One of the few wow beers, wish it had been a proper pour
about 3 years ago
Lambic Vieilli 5 Ans En Fût Chalifour
Light character for its age. The old Lindemans foeder from 3F (4-5 year) was even more enjoyable. First pour from Quintessence 22

Lambic Vin Jaune / La Vie Est Belge (2014) Chalifour
I’ve claimed this was the best beer I ever drank in 2018. Maybe doesn’t have same intensity with a small amount now. very good, but I think all unfruited lambic benefits from a larger pour and digestion time to really appreciate if
about 3 years ago
La Fruiterie with a stellar OG cognac barrel lambic. Never thought I would try it once, let alone twice. Very good beer, but I recall enjoying it even more in 2018
about 3 years ago
Maybe the best fresh Fou I’ve had. Mellow acidity and perfectly just ripe apricots. Not overly fruited, perfectly in balance.

Saint Lamvinus Grand Cru (2018) Chalifour
Way less tannic and old grape must than b1 which I got to try back in 2016 and 2018. It’s fresh, bold fruit forward druiven. Very nice now but I’d give it more time to build up more complexity
over 3 years ago
One of the best druiven lambic I’ve tried. Less intensity of fruit from the pommace allowing the base beer to shine through.
Good of course, but I comparing to other Cantillon red wine grape experiments this I thought was less impressive
over 3 years ago
One of my favorite blending grapes. Big fruit notes with fairly low tannins. Kept interesting with notable black pépper spiciness
over 3 years ago
Vin De Paille (2020) Chalifour
The beer of the weekend. White flesh grapes, vanilla, oak, marzipan/nuttiness from the barrels. Similar to La Vie est Belge but less assertive and more quenchable
over 3 years ago
Grand Cru Bruocsella Brut (2019) Chalifour
Phénoménal, one of my favorite Cantillons.

Lambic Vin Jaune / La Vie Est Belge (2019) Chalifour

2018 front sticker. Bold, slight spice, marzipan, intense but not over the top fruitiness
over 3 years ago
Tyrnilambic Baie D'Argousier (2021) Chalifour
Enjoyable once you get into it, but the nose is a little off putting with huge sulfur note

Rosé de Gambrinus (2008) Chalifour
Holds on nicely for raspberry. No vinegar, just slightly musty raspberry. Fairly clean pour
over 3 years ago
2017. Slight Smokey light a green groiseille.fruity, spicy and enjoyable
over 3 years ago
Pretty acidic after a long day of lambic. Good but not as smooth or vanilla forward as other bottles
over 3 years ago
Near perfect druiven. Hope it develops a bit of minerality with âge. Soft, low acid and easily crushable bottle
over 3 years ago
