4.3- surprisingly pleasant. Grape sweetness and acidity really comes through, the former maybe a bit too excessive. Grape expression quite clear around least though.

Lol effectively more acidic and bleachy parasol. Barrel relatively subtle. Did not finish.

4.45 - One of the most pleasant and refreshing things in a while. Pepper and green bell pepper first appears on the nose, but then when drinking the gueuze feels a bit more aged than it probably is. Pepper is like redish peppercorns but not exactly 1/

4.4 - very flat, lightly herbal (dill?), lemon, apples, hay, light smoke, gentle wood. Rather acidic. Nice! Cheers!

4.375 - косточка есть, и немного больше тела. Но ацетонисто. Лимон, яблоки, вишня. Странную бутылку дали, оч пенистая - дрожжи/осадок вылились сами. Но видимо и йогурт оттуда-же.

Tobacco, pepper, grape skins nose. Tart, vinous. Dry old hoppy finish. The grape character is muted.

Blåbær Lambik (Blueberry Lambic) (2022) Knyazev
Overly tart. Nice berry pit bitterness and dry finish and fruit sweetness - really feels like blueberry juice. But way too tart.

Too notch goose. First time i really understand what musty and dusty feels like. Balanced tartness, cantillon funk but less bitter and more rounded.

4.4 - fresh jammy nose. When it’s not the first lambic of the day the acidity is not that perceptible and instead you mostly get fruity sweetness: raapberries, blackberries, a hint of cranberries. When it’s the second lambic you get more citric and acetic

4.375 - way too much acetone. It’s otherwise nice, reasonably vinous, light black pepper notes. But does beg the question whether it would have been better as a wine.

4.125 - quite sulphidey smell of rotten eggs once you notice it along the rhubarb, grass, manure and distant strawberry aromas. Medium dry slightly salty finish, lightly watery - basically a funkier gose. Not too sharp fortunately w/ some minor bitterness

The orange, o peel but also the bitter orange fiber comes through very strongly, perhaps overly strongly. This harshness actually exaggerates the natural lambic bitterness. I can see how lambic + sweeter juicier oranges could work, but this is not great.

Что это вообще такое. Типа ягоды а-ля малина обычная, но скорее замешанные в йогурт вместе с арбузом и освежителем воздуха.
Cranberries, blackberries, raspberries. Some pleasant herbal and vinous characteristics. But is not harmonious with the lambic s.t. it just feels diluted.

Zwanze 2022 - Poivre de Gorilles Knyazev
4.375 - most non-surprising but also most pleasant zwanze in the last few years. Good straberry green apple hay lambic lightly vinous lambic base with the pepper sizzling in the background w/ red fruity and red peppercorn notes.

4.3 - b1 was better. Strong lemony, honey-ey notes. Mb even medicinal - almost strepsils-like. Apples, pears. Minimal carbonation. Very soapy. Acetic hit also quite strong. A bit of saltwater.

Lou Pepe Gueuze (2013) Knyazev
Лол англичане не выпили бутылку за 3 часа. 4.45 Smoke, hay, green apple, pear, cinnamon. A bit of a damp smell. Sharp citric acid but offset by extra sweetness. Very bitter finish that also helps distinguish sweeter fruitier notes of strawberry, kiwi 1/

malic-dominated, ok-bodied, slightly sweet, a touch of black pepper. All was going well. But woodruff adds this elderflower on steroids aroma, overwhelming herbal and bitter, almost medicinal notes when drinking.

Nice fruity, slightly and somehow more funky 4-1 mix of cider and white wine vinegar. Good body.

Excessively tart, grape must. Herbal, blueberry blackberry together with seed bitterness and slight oily body.

Gueuze Cuvée Moeder 10 Ans (2019) Knyazev
4.375 - a bit rough around the edges but the beautiful nose of straberries alongside the general suspects of hay, barnyard, apples and wet horse hair really adds something to the very good yet otherwise generic formula.

Lambic Grenache Blanc (2021) Knyazev
4.3 - Apples. Light thyme and rosemary. Maybe some elderflower and lemon. The tartness was a bit too much for some of the more delicate notes.

Beer #15. Crisp, good level of sweet for the mineral champagney tartness.

4.6 - that one’s pretty old and top 2 🐑 of the morning. Heavy dark dry skins, musty and so much microbial action I am not even knowledgeable enough to describe it. 94 yet the acid hasn’t taken over the grape - actually feels quite juicy, almost like wine

25% champagne, 75% wild goose. Lovely, grape-forward, grape skins, dry mineral finish. Citric acid. Good body. The sweetness and tartness well-balanced. Grape not hidden like in some other lambics. Would have again.

The sherry felt excessively light, the lambic was better matched with the sweetness s.t. the acidity brought out more appley sweetness. However the final product was still too delicate for being the 9th glass. But maybe a VORS with lambic? 🥰

4.4 - beautiful nose of fresh cherry flesh. Very good expression of red fruit, however imo 8 years is too much: the acetic acidity has started obfuscating the more interesting notes of cherry stones and any herbal/spice notes there may have been. 1/

Lambic Vieilli 5 Ans En Fût Knyazev
Light notes of apples, pears and lemon. Smooth, limited acidity. Surprisingly watery but that was exactly what was needed at 10am.

Lambic Vin Jaune / La Vie Est Belge (2014) Knyazev
Excellent nose of nuts, nutmeg and raisins, citrus and flowers. Sweet, surprisingly viscous body. Light acidity that pairs oh so beautifully well with the comte’s umami and own nutty flavour. Whilst the recommendation was to take a bite, chew and 1/

Rosé de Gambrinus (2012) Knyazev
Raspberries dominant on the nose with no sign of more herbal notes in younger rdg. A lot of acidity - it could have been worse. But not much more to say as acidity does mask everything else.

4.4 - a young slightly abrasive lambic gets nicely balanced out by the mineraly herbal sweetness of the grapes. The acidicity and sweetness blend into a strepsils but in a nice way lol

4.375 - a bit of cloves, basically a mulled wine. Grape skins, quite a lot of acidity. Very dry finish. A bit watery. Cranberry, cherry pits.

4.3 - rotten apples, soap, grape skins. Sweet but watery. Dry sweet finish. Various stone fruits.
A lot of herbs: oregano, thyme, lemongrass, lime leaf. Candied lemon, grape. Honey, smooth, good body. Dry lightly tart herbal hoppy finish.

4.375 - amazing peach nose, more clearly defined on keg than in a bottle. Light, tart, lightly sweet. Irrespective of the aroma it is, however, too watery, lacks complexity. Great under the sun.

4.4 - nose of grape must and seeds along with typical cantillon funk. Tart, vinous, lightly sweet - quite reminiscent of a typical red wine vinegar. Dry red wine finish.
