Intense, full, complex. Fusion of sweet wine qualities and lambic sourness and funk that works really well. Dry aftertaste with some tannins.

parcel where the poulsard and trousseau are grown. Pomace. 3 months maceration on the skins. 2 year lambic. Mix of both grapes. Very vinous. Fruity and some sweet and dry tart.

Wow. Nærmest vingummi sødt anslag, inden frugt og syre tager over. Minder mig om sherry/hedvin, jeg fornemmer den lette maceration med druerne, sødmen de bidrager med og en sindsygt flot balance. Bestilte lidt rilette til - hjernedød parring.

EB Frilltessence 2023. Paired with deep fried herring. Slightly simpler than the trousseau but still tasty. This one I’d say needs another 2-3 years to find its prime.
