Drinking this after a Jura Sauvign. Similar oxidation. cantillon is sharper in its acidity and longer in its finish. More funk. But, definitely wine like and similar to an oxidized Jura or manzanilla fino sherry

So fitting, we started the week at La Percée du vin Jaune. Now Tissot barrel aged Cantillon. Such a fitting combination. It is luxurious in the mouth. The oxidized Chardonnay is strong, and the lambic makes it all very floral. Love this bottle.
