Can't detect much cognac up front. As a lambic, it is impressively soft and smooth - especially for Cantillon. Bumping up 0.25 as it aerates. Bumped it up another now that I'm at the sediment.

Insane! So complex. Lambic barrel cognac, in that order. Great mouthfeel, soft texture and light carbonation, on point.

Surprisingly light, fruity and sweet. Subtle woody barrel notes. Underwhelming TBH.

2017. Gueuze délicieuse bien complexe. Petit goût de pomme du vieillissement en fut d'armagnac sur la fin. Terrible.

2018 vintage - tough to compare to the 2012 vintage I had back in 2015 since this tastes too young still, but it’s a banger all the same. Smooth yet funky, with blue cheese, apple, a bit of cognac, and a mild honeyed sweetness.

2020 edition. Wet wood, big time cognac barrel. So much sweet and candy white grape. Dry and earthy.

Una lambica de libro. Muy suave, gas correcto y muy fino. Tiene el dulzor de inicio muy rico. El toque que le da el envejecido en barril de cognac me aparece en el final del trago y retrogusto, otro dulzor distinto, pero no se apodera de la boca.

Cognac aroma. A bit of barrel flavor. Warm, sweet, tart. Finish lingers more than other beers we tried.
