Can't detect much cognac up front. As a lambic, it is impressively soft and smooth - especially for Cantillon. Bumping up 0.25 as it aerates. Bumped it up another now that I'm at the sediment.

Wonderful bouquet of apricot, peach and oak. Continues on the palate with decadent layers of oak and stone fruit. Long long finish. Incredible stuff.

Lots of stone fruit on the nose. A well-balanced level bitterness and sweetness. The colour is amazing.

1000e check in unique 🎉 wow. Chaleur d'alcool, complexité. Aucun défaut, sauf que c'est pas trouvable ahah. Douce tout de même, boisé et fruité. Cognac léger, mais il est la. Formidable. Clairement à un bon potentiel de vieillissement de fou. Lets gooooo

One of my favorite Cantillon lambic. Little but nutty like sesame, sweet, and woody. Well balanced! I just hope it has more cognac character.

New 2022 batch. Still very young so the barrels are super upfront, but huuuuge molasses rum with sticky toffee and vanilla, wow. This is gonna be awesome later on. A portion of Marsala as well that adds spiciness, cognac comes last but gives depth, tasty!
