Lambic D’Haute Densité

Lambic - Traditional

The result is surprising. The beer is amber, without carbonation, and comes in at 9.1% ABV and 8° Plato residual sugar. It's close to a Barley Wine or an oxidized wine like Madeira, Sherry or Vin Jaune. Even more surprising is that when we forgot a half-empty bottle, th beer was still good when we tasted it....after 8 days. This beer will be poured for the first time next weekend in Portland (Maine) for The Festival organised by Shelton Brothers and 12% imports.

쌍화탕의 느낌이 있는 향이 신기하다. 확실히 고도수라는 것이 느껴진다. 달달하기도 하지만 은근한 산미랑 잘 어울린다

Very rich flavour due to the oxidation. Very different to your usual lambic.

Dark amber, almost brown, clear, no head. Nose is prune, oloroso, nice dark wood, brown mirabelle. Leather and condensed milk. Taste is smooth and heavier, soft, tannic, wood. Long lasting. Some very shy acetic waves. Red fruits sheets. Close to a Madeira

Dry sherry flavour, dense mouthfeel (as expected!)

Very sherry like in flavour, but t also tastes like a slightly sour barley wine. Incredibly thick, smooth and strong. Dry red wine finish. 20cl is certainly enough! 😂

Crazy. The first sip is abrasive. Then mellows. But doesn’t mellow.

Back at Cantillon😍 helemaal plat, een houterig zuurtje, een bittertje. Niet mn beste canti ooit maar wel met een leuke backstory

For a strong beer, that had a barely wine upfront taste, the finish was amazing!

Totally unique for me for now and therefore special. Taste is a combination of a sour lambic without nearly any carbonation due to the long storage in barrels & bottles and the taste of a barley wine. Tastes perfect in its way so show me something better.

Highest ABV achieved via spontaneous fermentation. Definitely tastes rich like a Madeira; toffee and caramel notes while being surprisingly easy to drink and crave-able. Fantastic way to end our visit at the one and only Cantillon. 🥰

Complex for sure. Doesn't taste at all like a 9.1!

Typically not my choice of beer, being barrel-aged for 4 years and 3 more in the bottle. However, this is reminiscent of red wine in a good way, the aging comes through beautifully. Surprisingly the taste also hides the 9% abv. A pleasant experience.

3.70. It's ok. Closed to barley wine, sherry and other oxidized stuff, but it didn't catch the best part of oxidation. Interesting but not balanced enough.

I guess even Cantillon has beers they're trying to get rid of. Syrupy, strong

Aged in a barrel for 4 years, in the bottle for 3 years. Grape/wine and dark fruit aroma. There is a big barrel character up front, it starts sweet with hints of cherries and raisins. Heads then to an acidic sour dark red wine taste with excessive…
