Lambic - Traditional

The result is surprising. The beer is amber, without carbonation, and comes in at 9.1% ABV and 8° Plato residual sugar. It's close to a Barley Wine or an oxidized wine like Madeira, Sherry or Vin Jaune. Even more surprising is that when we forgot a half-empty bottle, th beer was still good when we tasted it....after 8 days. This beer will be poured for the first time next weekend in Portland (Maine) for The Festival organised by Shelton Brothers and 12% imports.

Highest ABV achieved via spontaneous fermentation. Definitely tastes rich like a Madeira; toffee and caramel notes while being surprisingly easy to drink and crave-able. Fantastic way to end our visit at the one and only Cantillon. 🥰

Totally unique for me for now and therefore special. Taste is a combination of a sour lambic without nearly any carbonation due to the long storage in barrels & bottles and the taste of a barley wine. Tastes perfect in its way so show me something better.

Very sherry like in flavour, but t also tastes like a slightly sour barley wine. Incredibly thick, smooth and strong. Dry red wine finish. 20cl is certainly enough! 😂

Blown away. Sweet start with a sherry/Madeira raisiny middle and lovely dry finish that lingers. Not much carbonation which is not a criticism. This is fantastic.

Dark amber, almost brown, clear, no head. Nose is prune, oloroso, nice dark wood, brown mirabelle. Leather and condensed milk. Taste is smooth and heavier, soft, tannic, wood. Long lasting. Some very shy acetic waves. Red fruits sheets. Close to a Madeira

A lambic barleywine?? Wow!! Red wine, toffee, light citrus and peach and dark plummy fruit, dry finish. Wish I could get bottles of this. I understand why it is polarizing because it is not like the other lambics, but it is a very good beer anyway.
