Lambic - Gueuze

Le 3 avril 2019, nous faisions un assemblage de Lambic comme nous en faisons plusieurs dizaines par saison. Un tel assemblage doit commencer à pétiller au bout de quelques mois pour donner naissance à une Gueuze. Mais la bière tarde à fermenter et nous décidons de la conserver plus longtemps en cave. Petit à petit, la fermentation s’est amorcée. De ce fait, nous ne pouvons pas parler réellement de Loerik. Il s’agit plutôt d’une Gueuze qui a pris son temps pour fermenter… plus de deux ans ! Aujourd’hui, elle présente une belle pétillance et offre beaucoup de finesse, de fruité et une belle longueur en bouche.

1ste check in. Low carb nog. Hop forward; citrus, bitterheid. Vrij droog, earthy. Beetje funk maar nie veel. Wel heel zacht. Citrus, pompelmoes, gember vanvoor op de tong. Ziltig, brett vanachter. Olieachtige bruocsella mondgevoel. Nog meer rijping!

Fruitig (citrus) op de voorgrond met een klein gebalanceerd zuurtje. Klein nadeel is wel dat de smaak redelijk snel verdwijnt en wat plat wordt.

LCI. It's a nice brew. Pretty much the same flavour profile as when I had it first back in August. Green apple, sourness and acidic. Funk hasn't arrived yet. This one needs some more time.
