Drank a lot of great lambic this past week, but this one is the winner. Perfect beer/wine hybrid, for my tastes. Juicy but not too sweet, clearly red wine influenced but not too vinous so you don’t know it’s a lambic. C’est bon, indeed.

Ça commence très bien ! Pas trop acide mais très finement astringente peau de raisin, florale sur une base raisin 🍇 bien fruitée et un peu terreuse rapeuse

Crispy mouth feel, subtle tannins, and a bit of funk combined with a clean finish. This feels like a modern take on lambic, which speaks very well to the future of Cantillon.

Absolute 🔥 wine-ish lambic. Tart, vinous, peppery spice, rich grape sweetness and a bit of briny Brussels funk to balance it all out. Color is glowing and beautiful. Fizzy carb that dissipates fast. Psyched to find this one in Paris.
