Into the Wine. The wine was quite sharp with loads of tannins. Beer was more balanced.

4.30. Cherries. Red wine. Almost the same nose and palate as the corresponding wine.

Jeudi 14 avril Cantillon. J’ai adoré celle là. Un beau tart mais qui est soutenu par les raisins tanniques, beaucoup de mûres/raisins, gros corps sans être trop astreignant.

Red wine grapes, very tannic. Personal favorite so far of tasting session Into Wine by Moeder lambic / Cantillon with lambic and wine.

Beer #7 during today’s “Into the Wine” tasting conducted by Moeder Lambic & Cantillon in Salle Ogivale at Hotel de Ville on Grand Place in Brussels. What an amazing experience!

Definitely better than the bottle opened two days ago. Anyway it has still to develop some of the hyper complexity charge proper of the b1. Dried red fruits, cherries, red grapes, good dryness and tartness, tannic too. 4.30

Round 7. Berry fruity, nice depth of flavour. The wine was pretty decent also.

Disappointed by this b2 compared to the outstanding and supreme b1. It has barely the carbonation of the previous one. Some weird aroma like veggies, vinegar, harshness. Then the vinous, macerated cherries, spicy profile. Definitely not my cup of tea.

Great one to take a pic 😅 the nose is pure shit in the beginning, opens not in a great way after a bit, and takes way too long to grow in balance and complexity. Taste is a little bit better but way too easy. Needs to grow up? 3.9 for now

Might have been an off bottle. Lots of sulfuric notes. Got much better after an hour being opened.

Deep red grape, spicy, more wine than funk on nose *and* flavor upfront. Minimal bite on finish - standard issue Cantillon texture and linger. Really, really digging it.

Another great ISO on my part. Super happy to be able to taste this beer. Very nice grape note, a slight sweetness on the palate and a nice but not too dominant dryness in the finish. Wonderful ♥️
