Recent roadtrip souvenir. This is a very delicate, smooth and quite dry lambic. One that nearly bridges the gap to wine.

This one is extremely sour and tart. Almost no carbonization, therefore slight dried fruits and a lot of oak. Nice one for food pairings!

Insane. The wood and yeast character is just so deep and layered. Musty, mushrooms, hay/barnyard, olive(?). Subtle acidity that accentuates without taking away from the yeast. Reminded me of 3F house character.

14-15 vintage, bottled in 18. Love this batch. Cellar must, antique furniture, vanilla, lemon, leather, and Cantillon funk.
