Brewed 12 December 2013 Bottled 15 March 2019 The wort of this Lambic underwent a boil of more than 5 hours in order to concentrate the sugars even more, to ultimately reach a density twice as great as a regular brew’s. If the recipe for this beer is technically the same as a Lambic, its flavor is radically different.

This is the best still lambic I’ve had. Initially there is a huge Vin Jaune quality to the aroma. Balsamic vinegar but delicately, caramel, old lambic. In the mouth it’s totally flat but it is very oily, coating and the depth of the lambic is insane. Love

The color is limpid, deep raisin brown. Nose: silky, date, raisin, medium-sweet apple, a suggestion of biscuit, cranberry, remote caramel, wild yeast, port, vanilla. Taste: date, raisin, aged port, vanilla, cranberry, damson, rowanberry, wild yeast.

Een extra sterke Lambic. Al is er - aan de kleur te zien - wel meer mee gebeurd. Voor mij veruit de minste van deze brouwerij. Geen sprankel, en een wat muffe nasmaak.

Wat moet je hier nou van vinden? Geen koolzuur, niet al te zuur, eerder wat zoet. Als je hem ruikt is het port, als je hem proeft wat minder. Voor mij zeer acceptabel, maar ik begrijp dat je deze minder lekker vindt.
