Lci Quintessence. Absolute winnaar. Tarlantillon is een meesterwerk en de parmezaan deed daar niet voor onder. Wat een genot.

18 avril. Quintessence. Oufff que c’est incroyable ça. La bulle du Champagne se marie tellement bien avec le lambic. Ça apporte de la légèreté mais un corps tout de même.

Wow. Restant de Quintessence part. 2. Hybride lambic/champagne. Équilibre parfait. Complexe, smooth, gorgée interminable. L’une des meilleures bières que j’ai pu boire. En plus le label est insane.

Deeply funky, cheesy. Lactic acid taste and feeling in throat. Drying on palate. Lingering winey vinegar taste got just a touch too strong as it sat. Woody barrel aroma emerged too. Super complex, offering something new on each sip. A star Cantillon!

Best white wine grape we had all weekend. Was actually taken back how good this was. Very complex and different than your standards, similar to menu pineau 19 we had on draft. No buttery fresh pressed grapes. Acidity, tannins, some stone fruit

Super interesting! You really get that Champagne profile coming through from the grape, gives it that Brut minerality. Yellow fruits as well, that should be very interesting to revisit in a while! Worked well with the parmesan pairing too. And that label!
