This is such a great beer with some time on it. Funk and pristine water. Fuck yes.

Pours dark with clear hop notes initially. Turn more towards nutty and oxidative apple and sherry notes after a while. Has a bitter finish which also diminishes a little with time. Fun but wouldn’t necessarily age this long in the future.

Cork had some funky stuff going on. But bottle OK. Musty. Funky. Old goodness. Cheese and meat paired well.

12/23/13 bottle. 4.35. Tart and musty with a funky hop assault. Nice to have an older bottle. Worked well with some Point Reyes blue cheese! Thanks for digging this out, Bill.

January 2013. While drinking zyf9, Simon said Iris was special at the end of his PCT hike, so I opened an old Iris. Super creamy, ridiculously vegetal (green bell pepper, broccoli), still quite bitter. Well balanced and wonderful, even if not funky.

Very sour but improved after the first taste. Sitting in the beer cellar for six years. Uncorked it tonight to try it. Had a whole glass and liked it a lot by the end. Had it with Paul Bocuse’s Poulet au Vinaigre and wow what a great pairing!

Cork was super funky, but now that it’s been ope a bit, the beer is fantastic. Funky and mild tartness, oak barrel. Great beer on a beautiful day.

Beautiful. Super dusty, citrus, mineral, leather, caramel, grass, smooth bitterness and oak on the finish. So good.

Beauty of a beer. Good carb, aged flavors of strong funk and mustiness. Oldest beer I’ve ever had and I was not disappointed.
