Original Gaelic On Cask Paradee
3% Irish dry stout using a blend of pale malt, black malt, and loads of flaked barley. Full bodied, and highly quaffable.  chock, full of rusty goodness with notes of espresso and cold, pressed coffee. Improves the OG big time!

6.7% combo of hazy IPA & West Coast IPA. Hop-forward with a simple malt bill showcasing Strata, Mosaic, El Dorado, and Galaxy hops. The aroma and flavor burst with strawberry cream, watermelon, and a hint of dank herb. Solid AF, I dig.

9% DDH’d DIPA inspired by “Magic Chords” with Eureka, Bravo, Calypso, and Azzaca hops. Hides the ABV well. Light, creamy, soft papaya pillow. Best new DIPA here in a bit.

2023 edition. 5.2% dark beer made with a touch of roasted chicory, organic Mexican coffee, St. John's Wort, and licorice root. Brewed with whole-leaf Cascade and Fuggles hops, the grains include pale, roasted & oatmeal.

5.3% Pils feat. Pilsner Malt & Saaz Hops, ferm’d w/special lager yeast which releases flavor compounds from malt & hops that would otherwise be trapped & unnoticed. The result is a crisp dry Pils exploding w/passionfruit, guava & grapefruit. Tropical yum!

8% double golden ale & paloma cocktail brewed w/grapefruit juice, blue agave nectar, lime peels, sea salt. SO much better than the prior edition I tried several weeks ago…must be a different recipe/batch? Now that this is out in cans, I predict success!

I Heard You Like Sabro Paradee
6.3% single hop hazy IPA with tropical and citrusy Sabro hops from the Pacific Northwest. Trolical island flavors of coconut, pineapple, and tangerine rind. Dig it!

5.2% Mexican-style lager brewed with malted heirloom Oxacan corn, sea salt and salicornia, a salt-rich succulent that grows in the salt marshes of Baja California. Addition of Key lime juice gives a bright little kick. Nice example of the style.

Named for the home remedy of Dickens time, this twist on a UK standard, a 6.8% doubled-up English dark mild ale, is combined with the flavors & ingredients of the classic British dessert, sticky toffee pudding. Grows on you with time.

8.6% hazy DIPA brewed with a blend of Pacific Northwest hop varieties layered on a base of pilsner malt, malted wheat, and malted oats. Nice dry, hoppy brew.

8.6% Paloma-esque Double Golden Ale with blue agave, grapefruit, and tequila yeast. Weird, but tasty. A bit of a metallic note in the back end troubles me.

5.3% Pilsner which features South African hop varieties and malted Carolina Gold rice. The bright aroma features notes of berry and lemongrass with honeyed green tea which leads right into the flavor supported by a soft, bready malt sweetness. Good!

Not 100% sure what style this one is (DFH wants you to guess), but it sure seems like a Gose of some sort. Light, quaffable, fruity fun.

6.7% blond stout brewed w/cocoa nibs, lactose, passilla peppers, cinnamon & thickened w/malted corn. Lovely nose. A tad milky sweet, w/pillowy mouthfeel. Spice is very subtle. Ultimately disappointing.

Professor of Obscurity Paradee
5.8% hazy beer brewed from dark Munich malt, wheat malt, and roasted grains fermented with a classic Bavarian wheat beer yeast strain for a delightfully fruity, spicy ale rich with toasty, wheaty malt flavors. Not a big fan of malty brews, but this is OK.

4.9% dry Irish stout, brewed with Robusta peppercorns and Alderwood-smoked sea salt. Hints of espresso and roasted coffee with a light, smoky taste. I don’t like dry Irish stout, and this one is not going to change my mind.

DFH 120 (18%) aged in Weller & Buffalo Trace barrels for a year with orange peel, cherries, and gentian root to mimic an Old Fashioned. Notes of maple syrup, toffee, caramel, and orange marmalade. HO REE FAWK!!!

Utilizing French method of biere de coupage, this brew blends a saison-style ale using a Lithuanian farmhouse yeast, a classic malt bill of pilsener malt, malted wheat, malted oats, & Saaz hops, with a mixed culture farmhouse ale aged 3yrs in French oak.

10% oyster stout  brewed w/an array of roasted malts & flavored with whole local Silver Select oysters from Arrowhead Point, purple dulse kelp from Maine, squid ink, and Hiwa Ka black salt. Bold espresso, roasted cacao, toasted bread, salinity & umami.

6.5% Gruit-style ale brewed over hot rocks with honey and herbs. This is actually quite good, and would serve nicely as a holiday ale at Halloween, Thanksgiving, or Christmas. I get nutmeg, cinnamon, honey, sweet tea, and orange anise. Yummers!

Continually-hopped session IPA  over a 45 minute boil with cascade hops. After fermentation, dry hopped with a blend of Lotus, Azzaca, and Mosaic. Notes of mango, pineapple, and grapefruit. Light, quaffable fun w/great flavor!

An unfiltered, unfettered, uncomplicwted Czech style pilsner barely at 12° plato from simple malt bill of malted Czech Pilsner malt and hopped with Czech Saaz. Great nose, and pleasant on the palate.

13% stout brewed using parti gyle technique. Chocolate, caramel, nougat, and peanut butter abound in this berry take on a candy bar classic. Intense chocolate & sticky PB yum!

12% imperial pastry stout inspired by hummingbird cake. Cinnamon, pecan, ripe banana, and pineapple, with hints of molasses & sugared coffee. A little boozy sweet & slightly metallic, but enjoyable nonetheless.
